Eight treasure chicken

The blog where I found this recipe is a treasure chest full of wonderful recipes. I love Chinese food, especially chicken recipes. The post archive dates from 2011 to 2013. I am late to the party but so very happy to have this food blog. YUM! YUM!!

Eight Treasure chicken used to be one of the popular dishes served at full 8-courses Chinese dinners.  Like many old and traditional dishes today it has somehow lost its favor and flavor with the younger generation, probably due to their ever changing demand for new creations, especially those that can be served up with speed and carry appeal in colors and presentation.  It is lamented that not many restaurant, although still capable of serving this dish, are able to prepare it the way it used to be. It took quite a while, with patience and persistence, for Grandma to get the dish cooked as desired.

A recent family get together, which turned into a session of reminiscing and recollection of food of bygone days that are slowly disappearing or changing into something no longer recognizable, resulted in Grandma producing this dish for the family
